Taco Bowls/Taco Salad

Okay, I know, everyone knows how to make taco salad… but if you are like me sometimes you forget about it and just how easy it is for those rushed nights when what you meant to make for dinner just didn’t happen… like last night here. Here’s how we do it!

1 pound ground beef, ground turkey or chicken
1 package taco seasoning mix (I’d love to do homemade — anyone have a good recipe?)
1 can black beans
1/2 onion
1 bunch romaine lettuce
2-3 roma tomatoes
black olives
shredded cheese
salsa/pico de gallo
sour cream
cilantro (okay, we don’t do cilantro because I’m the only one who will eat it… but you should add it in!)

Brown or cook meat. Drain. Add taco seasoning with a bit of water. Simmer for a few minutes. While it is simmering cut and dice up all of the veggies. Pile whatever you want from the options in a bowl and enjoy!  (I also came across an idea for making your own taco salad bowls… and now can’t find it again)

    I found a recipe for taco seasoning on Allrecipes.com. It’s called Taco Seasoning 1. I don’t know how this compares to the store bought stuff. I’d like to try this recipe for one night next week. Thank you for sharing.
