Weekly Meal Plan

I figure since I have a meal plan this week, my whole 2 viewers should benefit! 🙂  Here’s the menu so far…

Monday:

  • Roasted Roma Tomatoes with Garlic
  • Spinach Ricotta tortellini (Aldi special buy last week) with homemade spaghetti sauce
  • Pillsbury Italian Breadsticks (on sale at Kroger!!!) with Garlic Butter (I substituted a scant tsp of garlic powder for the garlic salt in this recipe — warning:  It is *really* garlicky!)
  • Tuesday:

  • Spinach-Strawberry Salad with Grilled Chicken
  • Sweet Potatoes
  • Wednesday:

  • Chicken Fajitas (tip: buy peppers at Aldi — you can get red, yellow and green 3-pack for $2.99 — and then cut what you don’t use into strips and freeze for next time you need peppers!)
  • Southwest Salad
  • Tortilla Chips
  • Thursday:

  • Meatloaf (looking for a new recipe… I usually make a great Parmesan Turkey meatloaf but haven’t been able to find ground turkey on sale in a long time!)
  • Mashed Potatoes
  • Green Beans
  • Friday:

    • Leftovers or DiGiorno pizza

    Haven’t thought as far as the weekend yet! I’ll post recipes as I make them, or the night before if I am organized. 🙂
