Working late most nights at my occasional job… so doing quick and easy dinners this week. Working late just means getting home the time I normally would if I had a 9-5 job (or less than an hour later) so it’s not a huge deal, but I’ve gotten spoiled to being able to spend an hour cooking dinner! (Does anyone actually *have* 9-5 jobs…. all of my full-time jobs have been from 8:30-5:30, or from 8:00-way past 5:00, or something similar!)
Monday 6/7 (work): Pinto beans in the crockpot, Squash, Cabbage, Mashed Potatoes (mostly cooked Sunday and reheated!)
Tuesday 6/8 (I get to cook but have a 6:30 mtg): Baked Paprika-Parmesan Chicken, Zucchini, Leftover veggies
Wednesday 6/9 (work): Leftover Pinto Beans and Cornbread; Prep for chicken kebabs to be grilled tomorrow night/ make hamburger buns
Thursday 6/10 (work so I’m letting my husband cook!): Hot Dogs/Burgers on the Grill on Honey Wheat Sandwich Rolls (another new recipe!) with canned baked beans (cook chicken kebabs for Friday as well)
Friday 6/11: Chicken Kebabs over brown rice
Saturday: Taco Bowls… aka Leftovers using up some of those pinto beans and kebab fixings
Sunday: not sure… probably leftovers… maybe I’ll make some kind of vegetable soup since we’re having so many veggies over the week and serve with salad… unless it is 90 degrees outside! Spaghetti if we run out of veggies or the weather is WAY too hot for soup!
