Linking up with orgjunkie a little late… I loved the latest Menu Plan sign so had to grab it!
It has been an insanely busy couple of weeks around here. That coupled with no payday until today means that menu planning and shopping for the week was done today. Here’s the plan for the week:
Monday: Spaghetti with meat sauce (and tons of fresh vegetables)
Tuesday: Tender Barbequed Chicken (new recipe; very good!), Mashed Red Potatoes, misc. leftover veggies, homegrown tomatoes (not homegrown by me, but someone did!)
Thursday: Leftover bbq chicken with squash and carrots… maybe potato salad if I find a recipe that will work with what I have at home.
Friday: Grilled Chicken Salad with feta cheese tons of yummy produce (blueberries, strawberries, onion. celery, whatever else I can find)
Saturday: Salmon (haven’t figured out how we’re going to cook it yet… open to suggestions!) with sweet potatoes and green salad.
Sunday: probably leftovers… I know it’s Fathers Day, that’s why we’re having salmon on Saturday when we have time to cook instead of rushing home from church trying to make something! 🙂
I am loving going to the grocery store and being able to come home with so many fresh fruits and veggies! We have so many healthy snack options for the week — celery, carrots, cucumber, blueberries, strawberries, plums, cantaloupe… yum!
