Menu Plan Monday 7/19/10-7/25/10

We got a massive amount of fresh basil CHEAP at the Farmer’s Market on Saturday… so the goal for the week is to use it up.

Monday:  Sloppy Joes on Honey Wheat Sandwich Rolls, sweet potato fries, salad

Tuesday: Chicken and Basil Stirfry (with white rice for a change!)

Wednesday: Tomato Green Bean Soup with Salad

Thursday: Ratatouille with French Bread

Friday: Penne Pasta with Pesto or marinara sauce, Caprese Salad and French Bread

Saturday: leftovers

Sunday: Tilapia, Roasted Red Potatoes, whatever veggies we still have at home

Also some breakfast planning so we do a better job of eating more than cereal (the 4-year-old) and smoothies (me) 🙂 Two ideas for this week:

Breakfast Burritos (egg, onion, cheese, peppers, bacon in a wrap or tortilla)

Whole Wheat and Oatmeal Waffles (I’m excited about trying these, especially since we have fresh blueberries!)

Wow, just realized we have 3 meatless meals this week.  Oh, well… when there are so many good fresh veggies around, who needs meat? 🙂  Personally, I could live on grilled corn, homegrown tomatoes, homemade bread, and whatever fruit is currently ripe for the rest of the summer…

    No menu plan. I eat whatever my wife places in front of me!
