Menu Plan Monday 11/1-11/7

Monday, Monday… means menu planning.  That has been a challenge this Monday, but I have finally conquered it!

Here’s the plan… I’m not even assigning days.  Last week I did well to cook at all, so my goal for this week is no more eating out!

Slow Cooker Lemon Garlic Chicken, brown rice, steamed broccoli

Spinach Lentil Soup (to replace the soup I never made last week… and use spinach for a cooking challenge I am in on another website!)

Spaghetti with a new homemade sauce (that I will probably go ahead and make today… quick and easy!)

Bean Soup with Italian Sausage

Bison Burgers with Sweet Potato Fries (carryover from last week)

Leftovers a couple of nights… or French Onion Soup if I run out of leftovers!

Also, taking these amazing better-for-you chocolate chip cookies to a MOPS potluck this week!

Editing to give reviews of new recipes:
Slow Cooker Lemon Garlic Chicken — I thought it was okay, I might try it again (I halved the recipe and I think that makes a difference in the crockpot). My husband loved it and the 4 year old ate his all up too.

Spinach Lentil Soup — very good! We’ll definitely make again, but we have lots of leftovers so it may be a while. For those of you who aren’t spinach lovers — you can’t taste the spinach but if you have texture issues with spinach you may want to leave it out. It would be good either way, spinach just adds some extra nutrients.

Spaghetti Sauce — this one I am going to have to work on. It made tons (1 cup/serving) but it was too watery for my tastes. It was good, just nothing special.

Bean Soup with Italian Sausage — Oh my. You must make this soup. It is amazing. I did tweak it a bit to make it healthier by only using 1 TBSP of olive oil and using no salt added tomatoes and low sodium chicken broth. I also added in some dried basil and oregano since I didn’t have the flavored tomatoes. We will absolutely be making this one again.

Haven’t tried the bison yet… check back Saturday for a review of it!
