Monday Menu Plan 11/29-12/5

Monday: Chicken with Mushrooms over egg noodles with broccoli
Wednesday: Chili mac/spaghetti (no, I don’t like having those so close together to the actual chili… but I don’t have time to cook on Tuesday or Wednesday night)
Thursday: Green Chilie Chicken Enchiladas (from Food on the Table) with homemade tortilla chips
Friday:Baked Potatoes with Broccoli & Cheese (or Leftover Buffet)
Saturday: eating out for dh’s birthday!
Sunday: dh’s birthday. so whatever he requests.

Shopping list (recipe-related with items I personally already have on hand striked-through — or is that struck-through?)
Produce Dept.

  • Mushrooms (3 cups)
    Onion (2 medium)
    Green pepper (1 medium)
    Russet potatoes (3-5 medium)
    Broccoli (1 bunch)

Meat Dept.

  • Chicken Breasts (2 pounds)
    Ground turkey or ground beef (1 pound)

Dairy Dept.

  • Eggs (2-3)
    Butter (3T)

    Mozzarella Cheese (6 oz)
    Sour Cream (1 cup + some for chili topping)
    Cheddar Cheese (2 cups)

Canned Goods/Soups

  • Chicken broth (3/4 cup)
    Cream of chicken soup (1 can)

    Green chili peppers, diced (1 4 oz can)
    3 cans chili, kidney, or pinto beans (or any combination)
    2 cans diced tomatoes (preferably low sodium)
    2 small cans tomato sauce (preferably low sodium)


  • Egg noodles
    Seasoned bread crumbs (1 cup)

    8 flour tortillas (8′)
    corn tortillas
    Ronzoni Smart Taste spaghetti


  • Chili powder (2.33 T)
  • Cumin (1 tsp)
  • Garlic
